How to cook chicken really good? Everytime I try, it tastes like boiled meat. Any help.........

marinate chicken with youghurt, masala, ginger & garlic paste, lemon juice before cooking. I m sure u gonna love sweet taste of chicken curry

Wretch, chicken thighs or leg pieces are not RED MEAT.
When you cook chicken curry, I do following:
Ingredients: 3 lbs chicken (medium cube), 2 medium onions, 6-7 cloves of garlic and 1 inch ginger minced finely:

1) Fry Onions until golden brown
2) add chicken and stir fry it on MEDIUM heat. add Mince Ginger and Garlic
3) Fry until water evaporates and then add chicken masala, salt to taste. (THE REASON YOUR CHICKEN TASTES LIKE BOILD CHICKEN IS BECAUSE YOU DO NOT FRY IT UNTIL WATER IS GONE)
4) Finely chop tomato and add that to chicken and keep stirr frying..
Chop cilantro and sprinkle to the chicken and enjoy it with rice or roti..

first start making a curry
go to the farm and catch a chicken( make sure you catch a big one)
cut the chicken and clean it inside out
put the chicken in the curry
cook like 4-5 hours
now your chicken curry is ready to eat

Just the chicken breast taste flat and it comes apart like thread.
Pieces form the whole chicken is the best.
It's a tial and error process, just make sure you not going to add extra salt ( one of my roommate did). Within week you will be the best, leave me message at 7895600560 I will be there.

Best way to cook chicken....
Everybody should try this.... You will love it

Take whole chicken and cut it in medium pieces, not small not too big.
use legs, thighs, breast and meaty part of drumstick and wings. (no skin, ribs, big bones, livers, and gizzards)
To the chicken pieces,
             Add salt, pepper, red chilli powder, red dried chilli, turmeric powder, cumin powder, cumin seeds, coriander powder, mustard seeds, Tejpaat, yogurt(3/4 cup), one or two pieces of cinnamon sticks and lightly crushed cardamom and mix really well. keep it in refrigerator for couple hours.

in a deep pan add some cooking oil and take some chopped onions, garlic, and ginger and fry it. after it is fried add the chicken to it and turn the heat to med/low, cover and cook stirring occasionally to make sure that chicken does not stick at the bottom.
In addition to above spices you can also add a little bit of chicken curry masala.

cook it for 30 to 40 minutes. The chicken at this point should be fried good, with all the masala sticking to it and  should be red/brown color

You will love this dish and cook it every weekend..

ok this is the way i cook... it really tastes perfect...

Ingredients required:

1. Chicken Breast.
2. Garlic.
3. Jira
4. Meat masala
5. Curd.
6. Hariyo Dhaniya
7. Tomatoes (optional)
8. Besar.


Get chicken breasts and have it cleaned well...don't let any blood stain to be present there..

1. Then cut garlic to small pieces or make a paste of it.
2.  Add  the garlic paste , besar, jira ( little ), meat masala ( little) to chopped meat. Well I like the taste of garlic more, so I let it dominate other masala taste.
3. Now add about 2/3 (depending upon amount of meat) big spoons of curd to it.
4. Chop hariyo  dhaniya and  add it... dhaniya really gives flavour :)
4. Add salt and let it marinate in the refrigerator for about half hour.

**do not keep the mixture out open*** Never do this

5. Later about after an hour, just heat some oil in nonstick pan (nonstick preferred) and then just fry it.

Make sure that you cover it while frying so that you don't loose any smell of masala...

by the way, you can add blended tomato to meat while you marinate...

don't add water while cooking, water comes from meat itself... add little amount of water only at last if you feel that it is going to be kharani 

it really tastes good...

Here is My version......for chicken or khashi..........Im just bored at work......I love cooking so here you are......

Cut up chicken ..mix thigh meat and breast meat.....lets say for a whole chicken ok.....I personally dont like the skin so I remove it with paper towel..easy to grab and peel...

first step......heat a big non stick  Deckchi or a big cooking pot  ..in High and add oil.

add...methi, teegpaat, red sukeko khursani.

when meethi becomes black....add onions..chopped up.....(about two good size onions)

stir them around couple times....untill light brown. Now add garlick and ginger paste ....two big  tbs Garlic and one tbs ginger ( paste......found in any Indian grocrey store)

turn heater ..gas dial to medium now..................add half cup of water.

stir again and aftet 4 mins add....11/2 tab cumin(jeera) powder and 1 tbs coriander(dhaniya) powder.......

stir again......now add about 5 cut up plum tomatoes......or vine grown..but not the very tiny ones hai. they are too  sweet.

cook for another 3 mins...add half cup of water and now add......beshar, salt, red chilli powder, paparika for more red color. and half cup of green cilantro and some crushed chyapi( shallots).

cook for a while  5-8 mins and stirr very often....add more water if needed to make like a ledo. Now look a the tomatoes and they should look like a curry ledo  already.....

add 4 cloves(lwang) 4 cardamon(sukumel) and one stick cinnamon stick (daal chini)or two big pinch cinnamon powder.

stirr and cook for another 4mins and now add chicken and stirr. add more cilantro leaves and another half cup of water and stirr again and cover.

turn to medium low  ......now cook for another 30-40  mins or when the ledo becomes to your desired texture.....

turn the heat off completely .........add half cup of cilantro fresh chopped. cover and let stay for five minutes .

ready to eat with some rice...aalo cauli ko tarkari.....kaalo daal and ..................hariyo khursani , ....Blendered with cooked  tomatos, dhaniyan and salt ra Timbur ko achar.  oh if you like get some pure ghee(Ghiu) heat in pan untill smoke comes out and pour over rice.......chhhhhhiiiiisiisisisssisis..sizzle sound LOL.

for different taste ..at the end add sour cream or plain yogurt.......
