I need experienced feedback on change of employer after 180 days of i-485 filed.

same here..looking to switch after 180 days of filing.

You don't really need to wait 180 days. Once you've the green card, the green card clearly states that there is no restriction to any employment as per the legal basis. It is more of a unspoken rule to not change the employer immediately.

We are talking about if i-485 is pending for 180 days not 180 days after GC is received.

When you are so close to the approval of I-485, I would suggest to stick with the same employer. But if you still decide to switch the employer, your new employer need to immediately fill the Request for Job Portability Under INA Section 204(j) form which is available at USCIS site.
